In June 2023, Sayreville, N.J.-based Sabert Corp. has announced the launch of new molded fiber blends made without the intentional use of per- and polyfluoralkyl (PFAS). Called Pulp Plus and Pulp Max, the proprietary molded fiber blends debuted at the International Dairy Deli Bakery Association. Sabert’s new pulp formulations are designed to assist customers in achieving their sustainability goals.
In March 2021, Nestlé announced the roll-out of chocolate made exclusively with the cocoa fruit, introducing Incoa, a 70% dark chocolate bar under its Les Recettes de L’Atelier brand. The launch brought the cocoa pulp-sweetened chocolate to a wide audience across several countries. It appeared on shelves in retail in France and the Netherlands with other European markets to follow.

Steps Involved in Fruit Pulp Production
1. Fruits are weighed and evaluated in terms of quality.
2. Pre-selection is done in order to exclude fruits improper for pulp production.
3. Fruits are washed and undergo a sanitization process with chlorinated water (10-100ppm, according to fruit type). Then, fruits are rinsed to remove chlorine residue.
4. Maturation degree of fruits is evaluated; only the fruits suitable for obtaining good quality pulp are forwarded to the processing zone.
5. During processing, pulp finishers equipped with sieves of different meshes are used to retain peels, seeds and other fruit portions.
6. If required, acidulants or preservatives are added at the homogenization stage.
7. The product is packed and stored at suitable temperatures to maintain nutritional, organoleptic and microbiological characteristics of the fruit pulp.
