PCR technology: An ideal and convenient technology in use for pathogen detection in food industry. PCR is one of the most frequently used technologies. The test enables the detection of a single bacterial pathogen, including E. Coli, Salmonella and Listeria, present in food by detecting a specific target DNA sequence. ELISA assays: The Enzyme-Linked Immunosorbent Assay (ELISA) method is the most common and preferred technique in detecting food allergens. However, ELISA methods may not provide reliable results depending on the situation.
