Pullulanase is an endo-type enzyme that cleaves α-1,6-glucosidic linkages in polysaccharides, such as amylopectin, glycogen, dextrin and pullulan. It requires the branching chain to be of at least a maltose length in order for it to be able to cleave the α-1,6 linkage. Pullulanase is found in plants and microorganisms. Pullulanases from microorganisms, such as bacillus brevis, bacillus acidopullulyticus and Klebsiella sp., are commercially available as an industrial enzyme preparation. Pullulanase is also referred to as “debranching enzyme”, because it hydrolyzes the branching α-1,6-glucosidic linkages in polysaccharides, such as amylopectin. This debranching activity of pullulanase is combined with the activities of other enzymes, such as β-amylase and isoamylase, for the production of maltose and oligosaccharides.
