Citric acid, ascorbic acid and iso-ascorbic acid are major food ingredients, and also play a major role in the fermentation industry. In the past ten years, the markets for these products have changed dramatically. The demand for citric acid and ascorbic acid in food and non-food applications has increased continuously and substantial capacities have been built up. Product prices have come down to historic lows, while raw materials have tended higher. Iso-ascorbic acid, introduced into the market as a cheap alternative to ascorbic acid, is losing importance, as competition from ascorbic acid is becoming stronger.
