Vacuum drying is a mass transfer operation in which the moisture present in a substance (usually a wet solid) is removed by creating a vacuum. Drying is an important unit operation for moisture removal in chemical processing industries such as food processing, pharmaceuticals, agriculture and textiles. Vacuum drying systems are usually used for drying hygroscopic and heat-sensitive substances. The principle is to generate a vacuum to reduce the chamber pressure below the vapor pressure of water, causing it to boil. With the help of a vacuum pump, the pressure around the substance to be dried is reduced. This lowers the boiling point of the water inside the product, which significantly increases the evaporation rate. The result is a significantly higher drying rate of the product. The vacuum drying process is a batch operation at lower pressure and lower relative humidity compared to ambient pressure, resulting in faster drying. The vacuum dryer is a device for vacuum drying. Vacuum drying systems are sometimes made of cast iron, but most are made of stainless steel so that they can withstand high vacuum pressure without any deformation. The oven is divided into multiple hollow trays, increasing the surface area for heat transfer. The oven door is locked airtight and a vacuum pump is connected to reduce the pressure. The material to be dried is placed on the tray in the vacuum drying system, and the pressure is reduced by the vacuum pump. With the dryer door closed, steam passes through the space between the tray and the jacket, allowing heat transfer by conduction. The water vapor in the feed is sent to the condenser, and after the drying vacuum pump is disconnected, the dried product is collected from the tray.
