Baked food is a convenience food baked with flour, yeast, salt, sugar and water as basic raw materials, adding appropriate amount of oil, dairy products, eggs, additives, etc., and baked through a series of complicated techniques. It can be enjoyed as refreshment before or after meals, as a staple food, or as a gift. Fresh baked goods are freshly made and sold in offline stores.
1. Bakery products can be classified into four categories: bread, cakes, pastries and desserts. In terms of scale, the retail sales of bakery products are 200 billion yuan, of which cakes, pastries and bread account for a relatively high proportion, accounting for 42%, 39% and 18% respectively. In terms of growth rate, the retail sales of bread, cakes and pastries all maintained a growth rate of around 10%. In 2020, the bakery industry as a whole will be impacted to a certain extent. It is expected that the growth rate of the industry will return to about 10% after the epidemic stabilizes.
2. Compared with Japan and South Korea, which have similar eating habits, the market size of China"s baking industry still has a large room for growth. At present, the per capita consumption of bakery products in Japan is 18.1 kg/person, and 7.2 kg/person in South Korea. China is close to South Korea, but less than half of Japan. The annual per capita consumption of bread category in China is even lower, only 1.7 kg, while that of Japan and South Korea reached 7.0 kg and 3.6 kg respectively. Based on this calculation, the scale of my country’s bread market still has room for improvement by 2-4 times.
