People are becoming more educated, thus understanding the difference between fresh fish and processed one. As a matter of fact, according to the American Institute for Cancer Research, which is a nonprofit organization, processed fish (including lox) is considered to be in the same category as processed meat. The processing itself appears to be the main issue when it comes to cancer risk. Therefore, demand for processed fish and seafood in the medium term is projected to be negatively impacted.
