There has been a major sea change in the way we buy and eat bread and bakery products, which can be exposed by analysing the industry in terms of its distinct market sectors: white bread, brown and wholemeal bread, speciality breads, and bakery products. White bread continues to be the most adversely affected by widespread market change, despite still representing a third of overall sales. The decline of white bread has been compounded by an increasingly health-conscious and quality-oriented UK consumer base. The prioritisation of these demands are increasingly trumping other factors behind consumer choice, such as taste and efficiency, effectively sentencing white bread to long-term decline.

Brown and wholemeal bread sales are not as susceptible to perceived health problems; however, their growth continues to be threatened by the increasing influence of speciality breads in the marketplace, which limits the sale of traditional bread (white bread, and brown and wholemeal bread) more widely. Speciality breads are enjoying great prosperity, having seen their value grow by more than a quarter since 2010.
