About Freeze Dried Foods
Freeze dried foods are considered to be the best dehydrated forms of food because their texture and taste are retained after rehydration. Foods that can be freeze dried include vegetables, fruits, meat, fish, and dairy products. Companies such as Nestlé uses the freeze-dried technology to produce baby foods. Freeze drying of foods is done by a process called lyophilization. This process lowers the atmospheric temperature of the food to below 32°F, and then high-pressure vacuum is applied to extract the water content in the form of vapor droplets. The vapor then collects in a condenser, which turns it back to ice and removes it. Finally, a gradual increase in the temperature helps to extract all the remaining moisture from the product. This process retains the physical structure of the food product and preserves it for re-hydration later.
Technavio’s analysts forecast the global freeze-dried foods market to grow at a CAGR of 6.59% during the period 2017-2021.

Technavio Announces the Publication of its Research Report – Global Freeze Dried Foods Market 2017-2021
Technavio recognizes the following companies as the key players in the global freeze-dried foods market: Nestlé, OFD Foods, Unilever, and Wise Company.
Other Prominent Vendors in the market are: Asahi Group Holdings, Backpacker's Pantry, Chaucer, Harmony House Foods, Honeyville, Mercer Foods, Mondelēz International, PARADISE FRUITS, Prepper's Pantry, and Van Drunen Farms.
Commenting on the report, an analyst from Technavio’s team said: “The latest trend gaining momentum in the market is rise in demand for additive-free and natural products. The freeze drying process freezes and sublimates all the water content from the food, especially from fresh fruits and vegetables. This process helps in keeping the product in its purest form by avoiding the addition of sugar syrup or other additives and thus the product is offered to consumers in the most natural form possible. It also makes it easier for manufacturers to market such products as there is an apparent demand for additive-free products.”
According to the report, one of the major drivers for this market is relatively superior quality of freeze dried products. Freeze drying is a dehydration process, which is also known as lyophilization. The advantage of freeze drying over other drying techniques such as spray drying or fluid bed drying is that during the freeze drying process, food is exposed to cold temperatures, and during this, the food does not lose any of its natural properties, while in other techniques, the food does lose some or all of its natural properties. Furthermore, the quality of the freeze dried food products is the highest due to the low temperature that is maintained during the entire process.
Further, the report states that one of the major factors hindering the growth of this market is Availability of other low-cost food drying techniques. The high cost of production associated with freeze drying technique is one of the major restraining factors for the market, as the cost associated with other drying techniques such as fluid bed drying is relatively low. Freeze dryers are comparatively costlier than spray dryers and fluid bed dryers. Due to this, freeze dryers remain unaffordable for small- and medium-scale industries.
