The UK has one of the largest retail food markets in both Europe and the world, with value sales having risen by around 3% per annum since 2004. However, volume sales have risen only very marginally across many product categories, with consumption having actually declined in some instances. Until the economic downturn, growth in market value was sustained by growing consumer demand for premium and speciality foods, although more people are now seeking value for money when shopping for groceries. Rising food prices have also been apparent in sectors such as bakery and dairy, due to the escalating cost of key ingredients.
