This report is one of many databooks covering key aspects of the Food service market.
  • Food service - Food service is defined as the sale of food and drink for immediate consumption either on the premises from which they were bought, or in designated eating areas shared with other food service operators, or in the case of takeaways transactions, freshly prepared food for immediate consumption. Datamonitor's definition excludes sales through vending machines and is restricted to sales in specific food service channels.
  • Caf,s - These are food service locations that may or may not have on-trade licenses (for regular hours), that serve a mix of food and beverage products, but where drinks sales are focused on non-alcoholic beverages, especially hot beverages. They will typically have some seating for customers on the premises where limited table service is offered.
  • Pubs and bars - Establishments with regular on-trade alcohol licensing arrangements (i.e. not extended beyond regular licensing hours) that, while they may also serve food, typically make 80% or more of their revenues from alcoholic drinks sales.
  • Nightclubs - Establishments with extended licensing hours for alcoholic drinks where the entertainment is focused on music and dancing. For countries where there are no restrictions on licensing hours, nightclubs are distinguished by the entertainment offered.
  • Full service restaurants (FSRs) - Locations where the primary function is to provide full meals with table service and that typically have an on-trade license. Food and beverages are typically paid for after their consumption and takeaway services are typically either not offered, or constitute a small percentage of overall revenues.
